Wiped down cutting board and handled knife, no handwash. Discussed with employee, employee properly washed hands before returning to work. Corrective Action Taken

High Priority - Employee handled soiled dishes or utensils and then picked up plated food, served food, or prepared a beverage without washing hands. Employee washing dishes, then began filling portion cups with butter, no handwash. Discussed with employee and person in charge proper handwashing techniques.

High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Raw cold smoked salmon over ready-to-eat butter in reach-in cooler on cook line right. Discussed with operator that raw cold smoked salmon must be kept separate from ingredients used for other bagels or foods. Operator moved raw cold smoked salmon to bottom of reach-in cooler for proper storage. Repeat 3/6/2024. Corrected On-Site Repeat Violation
