High Priority - Employee touching ready-to-eat food with their bare hands - food was not being heated as a sole ingredient to 145 degrees F or immediately added to other ingredients to be cooked/heated to the minimum required temperature to allow bare hand contact. Establishment has no approved Alternative Operating Procedure. Employee at cookline touched hamburger buns, lettuce, and onions with bare hands. Manager voluntarily discarded all during this inspection and had the employee wash hands and put on gloves before continuing to prepare the burgers. Corrected On-Site Repeat Violation Admin Complaint

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. 1. Inside reach-in cooler drawer below grill: steak (63F - Cold Holding). Employee at cookline stated the steaks finished thawing approximately 30 minutes prior. Manager moved the steaks to a freezer to rapidly cool to 41F. 2. Inside walk-in cooler: cheese (45F - Cold Holding); fish (45F - Cold Holding); crab dip (45F - Cold Holding). Manager stated all items were moved into the walk-in cooler from another cooler approximately two hours prior.
