Basic - Floor area(s) covered with standing water. Observed standing water on floor near make line flip-top cooler. Employee mopped water up during inspection. Corrected On-Site

Basic - Nonfood-contact surface soiled with grease, food debris, dirt, slime or dust. Observed reach in freezer for chicken products with a gasket soiled with food debris. Person in charge had employee start cleaning during inspection. Corrected On-Site

Basic - Wall not smooth, nonabsorbent and easily cleanable in food preparation, food storage, warewashing areas or bathroom. Wall behind 3 compartment sink is not smooth and easily cleanable.

High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Pasta 74F, pasta 78F; ( - Cold Holding) pasta was pulled from freezer and water was turned on over it. Placed back into cooler. Corrective Action Taken

High Priority - Vacuum breaker missing at hose bibb or on fitting/splitter added to hose bibb. Missing on black external hose in kitchen.

Basic - In-use utensil not stored with handle above the top of time/temperature control for safety food and rim of the container. Scoop handle in cheese. Person in charge corrected on site. Corrected On-Site

Basic - Wet mop not stored in a manner to allow the mop to dry. Mop is face down in mop sink. Person in charge hung mop to dry. Corrected On-Site Repeat Violation

High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. At the time of inspection, dishmachine testing 10ppm at dish level. Dish well testing 50ppm. Person in charge will use triple sink with quatanery ammonium set up at 200 ppm to sanitize until unit can be serviced. Corrective Action Taken

High Priority - Vacuum breaker missing at mop sink faucet or on fitting/splitter added to mop sink faucet. At the time of inspection, no vacuum breaker at the mop sink splitter with hose attached. Person in charge found vacuum breaker and added it to appropriate location. Corrected On-Site

Basic - Wet mop not stored in a manner to allow the mop to dry. Mop not hanging, stored in mop sink area on floor. Hanging mechanism is not functioning.
