High Priority - - From initial inspection : High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. At front counter potato salad, cut lettuce, cooked beets stored in plastic unlidded container not surrounded by ice underneath at 48-53F. Person in charge discarded. Discussed the possibility holding items on time. Provided time paperwork. Onions and cheese in right side of fliptop under hood at 46-48F. Observed unit with open spots allowing cold air to escape unit. Person in charge moved to other unit holding temperature. Corrective Action Taken Repeat Violation Admin Complaint - From follow-up inspection 2025-09-09: In makeline cheese double panned stored in plastic in metal pan on line at 47F. Person in charge states has been in unit for 3 hours. Moved to reach in freezer to rapidly chill. All other items 43F or below. Admin Complaint - From follow-up inspection 2025-11-14: Cheese, cheese in far right side of make line fliptop at 48-50F. Person in charge discarded. Recommended holding on time.
