High Priority - Dishmachine chlorine sanitizer not at proper minimum strength. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired and sanitizing properly. Observed Dish machine at 0ppm during inspection. Manager was able to get Dish machine to 100ppm. Corrected On-Site
12A-20-4
High Priority - Employee washed hands with no soap. Observed employee pick up dead roach and wash hands in bucket of water. I asked manager what was in the bucket and he Stated it was just water prior to using it to wash his hands. Reviewed with manager proper hand washing procedures. Manager washed hands properly. High Priority - Raw animal food stored over/not properly separated from ready-to-eat food. Observed Shell eggs stored over ready to eat sauces in flip top reach in cooler across from fryers. Corrected On-Site Repeat Violation Admin Complaint

Intermediate - Handwash sink used for purposes other than handwashing. Observed operator washing out wet wiping cloth in hand sink located at entrance of kitchen. Reviewed with operator the code on hand washing stations are only for hand washing only.

Basic - Time/temperature control for safety food thawed in an improper manner. Observed large bucket with frozen boxes of krab meat stored on floor near mop sink to thaw. Reviewed proper thawing procedures with manager. Manager placed bucket in walk in cooler. Corrective Action Taken
