Pico (48F - Cold Holding); sauté mushrooms (51F - Cold Holding); Alfredo sauce (46F - Cold Holding); raw fish, lobster meat (46-47F - Cold Holding), all items stored in both flip top and in same reach in cooler in back prep area near second walk in cooler. Items stored over night but lid and unit door open going in and out to restock area for prep. Manager had employee to place bags of ice on top of products and closed the lid. créme (47-48F - Cold Holding), stored in double door upright reach in cooler near manager office.
