On the cook line, butter (71F - Cold Holding). Operator stated it has been on the line since 7am. Discussed with operator butter is time-temperature control for safety.

Intermediate - Raw/undercooked animal food offered and establishment has no written consumer advisory. Raw animal foods must be fully cooked prior to service. On the brunch menu there is an item "eggs your way". The menu does not contain the consumer advisory. Operator stated they serve the brunch menu with the larger menu. Large menu container consumer advisory. Operator will be reprinting new menus.

Basic - In the walk in cooler, observed two packs of raw tuna fish in commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package. Packs of raw tuna were not fully frozen. Packs of tuna were cut open. Operator removed tuna from ROP. Corrective Action Taken
