In the walk in cooler, observed 8 packs of fully thawed mahi fish in the commercially processed reduced oxygen packaged fish. Commercially processed reduced oxygen packaged fish bearing a label indicating that it is to remain frozen until time of use no longer frozen and not removed from reduced oxygen package.

In the reach in cooler across from the cook top, observed cut tomato (53F - Cold Holding); cut ham (52F - Cold Holding); cooked chorizo sausage (50F - Cold Holding); sliced Swiss cheese (51F - Cold Holding) Operator stated foods were moved from walk in cooler at 11am. Operator placed foods on ice and moved to the walk in cooler. In the reach in cooler across from the cook top, observed cooked lobster salad (57F - Cold Holding) . Operator stated foods are placed overnight. Corrective Action Taken

High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. The sanitizer bucket near the soda machine, Sanitizer Bucket (Quaternary over 500ppm). Sanitizer is dispensed from the ecolab dispensary at the three compartment sink. Operator stated they will call ecolab to come fix.
