Observed sliced cheese (52F - Cold Holding); tuna salad (48F - Cold Holding); cooked chicken (47F - Cold Holding); cooked roast beef (48F - Cold Holding); cooked ham (46F - Cold Holding); cooked turkey (47F - Cold Holding) in the make line #1 cold holding unit. A temperature log stated an ambient temperature of 41F was recorded approximately 2.5 hours prior to inspection. The operator will continue to monitor temperatures. Corrective Action Taken Warning
