Observed at UHC heating machine - chicken nuggets (119F - Hot Holding) operator discarded at will - as per operator items held out of temperature for approximately 30 minutes.

High Priority - Employee failed to wash hands before putting on gloves to initiate a task working with food. Operator had employee wash hands. Employee rubbed hands together for less than 10-15 seconds while washing hands. Employee failed to rub hands less than 10-15 seconds. Employee touched face/hair and then engaged in food preparation, handled clean equipment or utensils, or touched unwrapped single-service items without washing hands. Employee touched face mask then engaged in touching food. Operator had employee wash hands. Employee switched from working with raw food to ready-to-eat food without washing hands. Employee dropped raw frozen burgers with gloves then moved to stack cooked chicken in heat tray. Employee picked up dirty handle of broom which fell on floor with gloves hand then proceeded to drop bread to make burgers.
