Observed a case of packaged shaved beef 50°F-55°F in kitchen on shelf thawing at room temperature. Per operator beef was removed from the freezer less than 4 hours ago. Operator moved beef into walk in cooler to quick chill. Corrective Action Taken
High Priority - Warewashing sanitizing solution exceeding the maximum concentration allowed. Observed at 3CS quaternary solution 400ppm. Operator added water to solution and remade 200 ppm. Corrected On-Site
