High Priority - Time/temperature control for safety food cold held at greater than 41 degrees Fahrenheit. Flip top - shredded cheese (48F - Cold Holding). Per operator items were held in unit less than four hours ago. Operator placed items in freezer to quick chill. Corrective Action Taken
03B-01-6
High Priority - Time/temperature control for safety food, other than whole meat roast, hot held at less than 135 degrees Fahrenheit. Observed in hot holding unit in kitchen - pork ribs (127F - Hot Holding); cooked chicken (127F - Hot Holding). Per operator items were prepared less than 4 hours ago. Operator placed items in oven to reheat. Items now reading- cooked chicken (166F), pork ribs (188F). Corrected On-Site Repeat Violation Admin Complaint

Basic - No conspicuously located ambient air temperature thermometer in holding unit. Advantco reach in cooler and flip top in kitchen.
